My herb garden is growing strongly right now and a great time to use some fresh herbs.  I decided to cook up some Chicken and Sage.  It is very easy and no oven involved.

Ingredients

chicken in pieces (basically a cut up chicken)
Garlic cloves about 5 but up to you
10 Sage leaves washed and dried
2 Tbs Olive oil
Salt and pepper to taste

In a big pan with abut 2 inch sides place on medium high heat and olive oil.  When the oil is heated add the chicken pieces and brown up nicely on all sides.  Toss in the sage and garlic for about a minute turning it with the chicken.  Turn down the heat to a medium low and keep cooking the chicken until the internal temperature is 165° F (75° C).  The skin will be nice and brown, the sage will be crispy and the oil will be flavored with the herbs and garlic.  Serve with rice or roasted potatoes.
